Oscar Night
I decided to have a mini Oscar party for 4 last night. I made bruschetta, home made ( Served on baked sliced sourdough with a brushed coating of olive oil before baking on one side). Now I know why it is so expense as an hors d'oeuvres. It is very labor intensive. Small mini pizzas with a home made sauce ( I took whole wheat flat bread almost like a tortilla and spread the sauce and cheese and sprinkled a few pieces of pepperoni and then a light grating of Parmesan when it came out. When cut into finger food size bites they are slightly crunchy. A veggie platter with homemade blue cheese dressing, Guacamole dip with a thin chip that is air blown and not really a chip.
Then made a batch of Island Breeze to drink. 1/3 OJ, 1/3 pineapple juice, 1/3 cranberry then add that mix to a glass of ice with a shot or two of Malibu Coconut rum.......
Refreshing and light the Coconut rum adds flavor and almost no alcohol it is like only 40 proof, and in a tumbler it is just flavor.
What a work out. I worked almost 3-4 hours in the kitchen for this to make it all come out and be ready. Par boiling the Tomatoes and preparing them was the longest. All slicing, dicing etc was done by hand with a knife. Then I had to prepare the garlic and mince it with the basil, a little salt and pepper and to take it up a notch I sliced very thin pieces of mozzarella to put on the small toasts then added a little balsamic vinegar to the bruschetta mixture. They can't get soggy that way, and have a little bite to them making the mouth water. The whole house smelled like garlic especially since I had to cook up some onions and garlic in a fry pan with olive oil before I blended them with the tomatoes and all the other ingredients to make some pizza sauce .
So Oscar Night took second to all the good, and for the most part, all healthy food. ( I could have nixed the pepperoni and subbed some artichoke hearts for the pizza and wow ! )
